A yummy switch from the usual chocolate treats I make. I saw this on a friend's facebook page.
Oatmeal Cream Pies
From Blooming on Bainbridge
Oatmeal cookies:
1 1/4 c softened butter
1 c brown sugar, packed
1/2 c sugar
1 egg
2 t vanilla
1 t soda
1/2 t salt
1/4 t cinnamon
1 1/2 c flour
3 c oats
Preheat oven to 375. Beat butter and sugars until creamy. Add egg and vanilla, mix well. Spoon flour into measuring cup and level with a knife. Combine dry ingredients; mix well. Add to butt mixture and blend well. Drop by rounded tablespoon 2 inches apart on cookie sheet lined with parchment. Bake for 10 min and cool for 2 min in pan. Finish cooling on rack.
Cream filling:
1/2 c softened butter
2 c powdered sugar
1-2 T whipping cream
Combine all ingredients and beat on low until mixed. Continue beating on high until light and fluffy.
Spread 1 T of cream between 2 cookies.
*These are quite delicious. The only thing I did different from the recipe was that I used margarine instead of butter. Mine didn't seem to spread as much as pictured in the original recipe, but still tasted delicious. I also used cooking spray instead of parchment paper.
